# How-To:
01 - Dissolve sugar in warm water in a large bowl; sprinkle yeast over and let stand 5 minutes until foamy.
02 - Add melted butter, salt, and flour to yeast mixture; mix until soft dough forms. Knead 5 to 7 minutes until smooth and elastic.
03 - Cover dough and let rise in a warm place 45 to 60 minutes until doubled in size.
04 - Combine cream cheese, cheddar, jalapeños, garlic powder, smoked paprika, salt, and chives in a medium bowl; mix until smooth.
05 - Preheat oven to 425°F and line two baking sheets with parchment paper.
06 - Divide dough into 30 equal portions and flatten each into a small disc.
07 - Place about 1 teaspoon of filling in center of each disc; pinch edges to seal and form balls.
08 - Bring water and baking soda to a gentle boil. Boil bites in batches for 20 to 30 seconds; remove with slotted spoon and transfer to prepared sheets.
09 - Brush each bite with egg wash and sprinkle with coarse sea salt.
10 - Bake for 12 to 15 minutes until deep golden brown.
11 - Allow bites to cool slightly before serving warm.
