# How-To:

- Set oven to 325°F (165°C).
- Pat chuck roast dry with paper towels and season all sides with kosher salt and freshly ground black pepper.
- Heat olive oil in a large Dutch oven over medium-high heat and sear the roast 3 to 4 minutes per side until deeply browned; remove and set aside.
- Add onions, carrots, parsnips, potatoes, celery, and garlic to the pot and sauté for 5 minutes, stirring occasionally.
- Stir in tomato paste and cook for 1 minute to enhance flavor.
- Pour in dry red wine, scraping up browned bits from the bottom and simmer for 2 minutes to reduce slightly.
- Return the seared roast to the pot; add beef broth, dried thyme, dried rosemary, and bay leaves ensuring liquid reaches halfway up the roast.
- Cover and place pot in oven; roast for 2.5 to 3 hours, turning the roast once halfway through, until beef is fork-tender and vegetables are cooked.
