Ingredients
- Dry Ingredients: 1 cup unsalted shelled pistachios, 1/2 cup rolled oats (certified gluten-free if needed), 2 tablespoons unsweetened shredded coconut, 2 teaspoons culinary matcha powder, 1/4 teaspoon sea salt
- Wet Ingredients: 8 large Medjool dates, pitted, 1 teaspoon vanilla extract, 1 tablespoon coconut oil melted
- Decorations (Optional): 2 tablespoons white chocolate chips melted (for snow drizzle), 2 tablespoons dried cranberries or pomegranate seeds (for ornaments), Extra chopped pistachios or shredded coconut (for garnish)
Instructions
- Step 1:
- In a food processor, pulse the pistachios and oats until finely ground.
- Step 2:
- Add shredded coconut, matcha powder, and sea salt. Pulse to combine.
- Step 3:
- Add the dates, vanilla extract, and melted coconut oil. Process until the mixture forms a sticky dough scrape down the sides as needed.
- Step 4:
- Scoop out 1 tablespoon portions and roll into balls. For a tree shape, pinch one end to form a cone.
- Step 5:
- Place the bites on a parchment lined tray.
- Step 6:
- If decorating drizzle with melted white chocolate and sprinkle with dried cranberries or pomegranate seeds. Garnish with extra pistachios or coconut.
- Step 7:
- Refrigerate for at least 30 minutes to set. Store in an airtight container in the refrigerator for up to 1 week.

Notes
