I enjoy making these energy bites with my family during the holidays because they are fun to shape and decorate

Ingredients

  • Dry Ingredients: 1 cup unsalted shelled pistachios, 1/2 cup rolled oats (certified gluten-free if needed), 2 tablespoons unsweetened shredded coconut, 2 teaspoons culinary matcha powder, 1/4 teaspoon sea salt
  • Wet Ingredients: 8 large Medjool dates, pitted, 1 teaspoon vanilla extract, 1 tablespoon coconut oil melted
  • Decorations (Optional): 2 tablespoons white chocolate chips melted (for snow drizzle), 2 tablespoons dried cranberries or pomegranate seeds (for ornaments), Extra chopped pistachios or shredded coconut (for garnish)

Instructions

Step 1:
In a food processor, pulse the pistachios and oats until finely ground.
Step 2:
Add shredded coconut, matcha powder, and sea salt. Pulse to combine.
Step 3:
Add the dates, vanilla extract, and melted coconut oil. Process until the mixture forms a sticky dough scrape down the sides as needed.
Step 4:
Scoop out 1 tablespoon portions and roll into balls. For a tree shape, pinch one end to form a cone.
Step 5:
Place the bites on a parchment lined tray.
Step 6:
If decorating drizzle with melted white chocolate and sprinkle with dried cranberries or pomegranate seeds. Garnish with extra pistachios or coconut.
Step 7:
Refrigerate for at least 30 minutes to set. Store in an airtight container in the refrigerator for up to 1 week.
