This winter salad became a family favorite the moment I served it at our holiday gathering; the kids loved the snowflake chips!
Ingredients
- For the Snowflake Tortilla Chips: 4 large flour tortillas, 2 tbsp olive oil, 1/2 tsp sea salt
- For the Salsa: 3 medium ripe tomatoes, diced, 1/2 small red onion, finely chopped, 1 small jalapeño, seeded and minced, 1/4 cup fresh cilantro, chopped, Juice of 1 lime, 1/2 tsp salt, 1/4 tsp black pepper
- For the Winter Salad: 4 cups mixed winter greens (e.g., kale, baby spinach, arugula), 1/2 cup thinly sliced radishes, 1/2 cup pomegranate seeds, 1/3 cup crumbled feta cheese, 1/4 cup toasted pecans or walnuts, roughly chopped
- For the Dressing: 2 tbsp olive oil, 2 tsp white wine vinegar, 1 tsp honey, Salt and pepper to taste
Instructions
- Preheat:
- Preheat the oven to 375°F (190°C).
- Cut:
- Using snowflake-shaped cookie cutters, cut out shapes from the flour tortillas. Brush both sides with olive oil and sprinkle with sea salt.
- Bake:
- Arrange the tortilla snowflakes on a baking sheet in a single layer. Bake for 8–10 minutes flipping halfway until golden and crisp. Let cool.
- Make Salsa:
- In a medium bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, salt, and black pepper. Stir well and set aside for flavors to meld.
- Toss Salad:
- In a large bowl, gently toss winter greens, sliced radishes, pomegranate seeds, feta cheese, and toasted nuts.
- Prepare Dressing:
- Whisk together olive oil, white wine vinegar, honey, salt, and pepper. Drizzle over salad and toss to coat.
- Serve:
- Divide salad among plates. Arrange snowflake tortilla chips on top or on the side. Serve with a generous spoonful of salsa.
